Ash gourd, also known as winter melon. The powdery coating of this vegetable is responsible for its name, Ash Gourd. With a round and oblong shape, Ash Gourds have an exterior skin which can vary between dark green to pale grey. Its pale green skin encloses a bright white, crisp, and mildly sweet flesh. They taste mild, like a cucumber, and are soft to chew. The gourd's subtly sweet flavour makes it a versatile ingredient, suitable for both savoury dishes and sweet desserts. In India, it's used in sambar and sweets like Petha.
