Coriander contains antioxidants that can delay or prevent food spoilage. Both leaves and seeds contain antioxidants, with leaves having a stronger effect. Chemicals from coriander leaves have antibacterial activity against Salmonella choleraesuis, acting as non-ionic surfactants.
