DNV, a premium form of dried lentil dumplings, is very popular in Bengali cuisine. These are made from a paste of musur dal (red lentils) and winter melon, which is sun-dried for 3-5 days. Bori can be fried as a snack or added to vegetable dishes to enhance the taste or add variety.
